The ends of the bread (with I like to call the "bread's knees") keep the middle slices from getting dry. If someone eats the first "knee", you will notice that all the other slices will gat dry and crisp. By the way, I have OCD and I have a ritual and a sequence to eat my food, but the thing with the first slices is scientifically true. Or at least I feel better believing so.
